Never had other animal hearts but I can confirm that chicken heart is delicious, same with the gizzard. (the grinding stomach) Although you have to cook it like any chicken unless you want Salmonella, same for Anthony's boar's heart unless he wants Trichinosis.

Oh man, it's been so long since I've had chicken heart or gizzard.

Oh man, it's been so long since I've had chicken heart or gizzard.

They sell packs of gizzards and hearts together for dirt cheap, so about once every two or three months I'll buy some and fry those sumbitches up for some good eatin'. I tried to make a gizzard stew once, but it just didn't work that well. It's deep fried or nothing.

About the south, you can't really think of "the south" as one place. There's a fuck of a lot of difference between counties in NC, you start comparing say, South Carolina to Oklahoma, or North Carolina to Alabama and you're stretching. As far as around here though, you can gauge how shitty a place is by the income level. You want somewhere that's solidly below average. If you get too poor you get into some crazy hick Slingblade shit, and if you go the other way and hit upper-middle class you get asshats that are painfully boring and think Lexus, Olive Garden, and big chain department stores are the finest things in life.

It does go without saying, but you said it anyways. I was just sharing some observations. I dunno, maybe start a conversation. Maybe someone would come in and say "yeah man, Georgia and Kentucky are like night and day" or maybe some thoughts on my "below average income = cool people/places" theory.

Eh, honestly you can get better versions of what the south offers in other rural areas of the country. I'd take West Virginia or Michigan's UP over most of the south any day.
