A quick note on french fries:

Admittedly I haven't done any real research, but I would take their introduction by Thomas Jefferson as a myth. A lot of foods have been attributed to Jefferson either bringing them over from Europe, or creating them; including Mac & Cheese, and brussle sprouts. I don't think any of these are verifiable.

Also, it was always my understanding that french fries weren't called that because they were from France, but because they were 'frenched'; that is cut into thin strips.

Quick trivia: you spelled "Brussels Sprouts" wrong.

But yeah, a lot of that trivia that gives guys like Thomas Jefferson (or Benjamin Franklin for that matter) credit for introducing things is - at the best - extremely suspect. Modern historians are taught to ignore most stuff like that because it mostly amounts to urban legend. Some things actually were introduced by these men, or if they weren't the "first," they certainly might have been the "first of consequence". But the interesting bits of history isn't the actual names and dates of these "events" but the stories that surround them and what they tell us about the human condition - whether Brussels Sprouts were introduced in 1776 by Jefferson, or 1782 by a common peasant woman, is kind of pointless compared to the overarching narrative of the diversification of crops and diets during this era of pre-industrialization.
